T-bone steaks are cuts of beef from the short loin. This steak has a “T”-shaped lumbar vertebra (the vertebrae at the base of the spine), which gives them their names, as well as abdominal muscle portions on each side. These cuts of beef are not to be messed around with; they’re big, they’re tender and they mean business.

T-bone steaks are cuts of beef from the short loin – it has a “T”-shaped lumbar vertebra (the vertebrae at the base of the spine), which gives them their names, as well as abdominal muscle portions on each side.
