About the Cut

Fore Rib

The name ‘Côte de Boeuf’ is French for ‘rib of beef’ (more specifically the fore rib), and it typically encompasses ribs 6 through 12. This area of the cow is known for its well-developed muscle and significant marbling, which contribute to the steak’s deep flavour and succulence. Perfect for grilling or slow-roasting, Côte de Boeuf is a must-have if you’re searching for that extra special steak!

Owton’s Top Tips!

Our Beef Tomahawk (900g to 1kg) is the ultimate centrepiece for serious steak lovers. Cut on the bone for maximum flavour and visual impact, this is a proper showstopper that delivers tenderness, richness and drama on the plate.

Before cooking, bring the steak to room temperature to help it cook evenly. Sear on all sides in a hot pan or over BBQ flames to create a deep, caramelised crust. Then finish in the oven or over indirect heat on the barbecue until it reaches your desired doneness. Aim for an internal temperature of 55 to 60°C for medium-rare, and always rest for at least 10 minutes before slicing to keep it juicy.

This cut is perfect for sharing! Store chilled and use within a few days, or freeze on arrival if you’re planning ahead.
