- 1 tbsp oil

- 1 large onion

- 2 cloves of garlic

- 1 red pepper

- 150 ml red wine – a merlot would be perfect

- 2 tbsp tomato purée

- 1 400g can of chopped tomatoes

- 1 can of red kidney beans or black beans

- 1 tbsp hot chilli powder

- 1 tsp paprika

- 1 tsp ground cumin

- A splash of Worcestershire sauce

- 300 ml of beef stock
-
- 10g of good-quality dark chocolate
-
- 1 tsp oregano
-
- 2 bay leaves

Method
- First up, get your veggies prepped. Dice the onion, finely chop the garlic, and chop the red pepper.
- Get a large pan on the hob on a high heat and add the oil.
- After 1 or 2 mins, when the oil is hot, add the onion and turn the heat down. Stir regularly and simmer for about 5 minutes, or until the onions are soft.
- Once the onions are cooked, add the chopped garlic, and all the spices and give it a good stir.
- After a couple of minutes, turn the heat up and add the steak mince – you want it to sizzle and fry rather than stew. Break it up with a wooden spoon so it cooks evenly.
- Once the mince is browned, and there are no more lumps or pink bits, turn the heat down to medium and slowly add in the wine and beef stock, stirring continuously as you add it in.
- Add the drained kidney beans, Worcestershire sauce, tomatoes, oregano, tomato purée, and give it a stir.
- Season with salt and black pepper to taste and add in the chocolate at this stage too.
- Add a couple of bay leaves, stir, then pop a lid on the pan and let it simmer over a low heat for around 45 minutes.
- The chilli is cooked when the sauce is nice and thick and the steak mince is tender.
- Ultimate chilli tip: To make this chilli recipe go one step further, cook it the day before you plan to serve it and keep it in the fridge overnight. Trust us, this gives the chilli time for all the flavours to maximise and get to know each other!

Can I make chilli con carne in a slow cooker?
Yes! Chilli made in the slow cooker is an excellent winter favourite. Simply add the cooked beef to the slow cooker and leave it for the flavours to permeate, stirring occasionally.
