Red Wine & Thyme Braised Chicken

This Red Wine & Thyme Braised Chicken Leg recipe is ideal for those autumn days when you want a rich, hearty meal with minimal effort. Made with tender chicken legs, red wine, fresh thyme and seasonal veggies, this dish is perfect served with creamy mashed potatoes, crusty bread or buttery roasted vegetables.

INGREDIENTS:

    • 1 tsp olive oil
    • 25g butter
    • 4 Owton’s chicken legs
    • 1 onion, chopped
    • 2 garlic cloves, crushed
    • 200g button or chestnut mushrooms
    • 225ml red wine
    • 2 tbsp tomato purée
    • 2 thyme sprigs
    • 500ml chicken stock

1. Heat the olive oil and half the butter in a large casserole dish.

2. Season the chicken legs, then fry for 5 mins on each side until golden brown. Remove and set aside.

3. Melt the remaining butter, fry the chopped onion for 5 mins until soft, then add the crushed garlic and cook for 1 min.

4. Stir in the mushrooms, cook for 2 mins, then pour in the red wine. Add the tomato purée, let it bubble away for 5 mins.

5. Add the thyme and chicken stock, then put the chicken legs back in, cover, and simmer for 1 hour until tender.
