INGREDIENTS:
- 700g (1 lb 9 oz) Diced Beef
- 2-3 tbsp Plain Flour
- 320g (11 oz) Potatoes, Diced
- 1 Onion, Finely Chopped
- 200g (7 oz) Massaman Curry Paste
- 400ml (1 + 2/3 Cup) Chicken Stock
- 500ml (2 Cups) Coconut Cream
- 2 tbsp Fish Sauce
- Juice of 1/2 a Lemon
- 1 tbsp Light Brown Sugar
- Cooked Rice (Optional, for serving)
- Chopped Coriander (Optional, for garnish)
Instructions
1. Coat the diced beef (700g | 1 lb 9 oz) with plain flour (2-3 tbsp). Ensure it’s evenly and lightly coated.
2. Dice the potatoes (320g | 11 oz) and finely chop the onion (x 1). Keep the potato pieces similar in size to the diced beef.
3. Place the diced potatoes and chopped onion in the slow cooker.
4. In a separate bowl, combine massaman curry paste (200g | 7 oz), chicken stock (400ml | 1 + 2/3 Cup), coconut cream (500ml | 2 Cups), fish sauce (2 tbsp), lemon juice (1/2 lemon), and brown sugar (1 tbsp). Whisk well to remove any lumps from the curry paste.
5. Pour the sauce mixture over the potatoes and onions in the slow cooker. Add the coated beef, ensuring any stuck-together pieces are separated.
6. Cook on low for 8 hours.
7. After cooking, stir well, and it’s ready to serve. You can enjoy it on its own, with rice, or with naan bread for dipping. Garnish with chopped coriander if desired.
