Ingredients (12 chicken wings / 4 servings)

Chicken Wings

  • 12 chicken wings (approx 1kg)
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp baking powder

BBQ Sauce and Glaze

  • 300g tomato ketchup
  • 4 tbsp white wine vinegar
  • 2 tbsp black treacle or molasses
  • 5 tbsp brown sugar
  • 2 tbsp vegetable oil
  • 3 tbsp honey
  • 1 tbsp Worcestershire sauce
  • 1 tsp English mustard
  • 1 tsp paprika

Method and instructions

  1. Preheat your outdoor grill / barbecue to medium heat.
  2. Prepare each wing by cutting it at the joint so you have a mini wing and drumette. Dry the chicken wings with paper towels and place them into a large mixing bowl.
  3. Add the salt, pepper and baking powder to the bowl of wings and toss to combine. It’s important that the wings are completely dry as this will only apply a light coating.
  4. Once mixed, place the wings on the preheated grill, turning occasionally, until the chicken is well browned on the outside and no longer pink in the middle. This should take between 25 to 30 minutes.
  5. Whilst the wings are cooking on the grill, start to make the barbecue sauce.
  6. Place all of the ingredients into a saucepan and mix well.
  7. Heat the saucepan of ingredients over medium-high heat until the sauce starts to bubble. Once boiled, leave to simmer for 5 minutes and take off the heat.
  8. The wings should be cooked by the time you create the BBQ sauce and once both are ready, toss the chicken wings and sauce in a large bowl.
  9. Immediately serve.
