A great BBQ is all about heat control and patience. Sear your steaks over a high heat, then let them rest. Burgers and sausages do best over medium heat to cook through without burning. Chicken breasts and pork chops should be cooked through gently to keep their juiciness. And if you’re tackling pitmaster meats, low and slow is the name of the game. Bonus tip! Let your meat come to room temperature before it hits the grill, it makes a real difference.
