Owton’s Topside of Beef; A Carvery Has Never Looked Quite So Good

Topside, also sometimes known as the ‘poor man’s sirloin,’ is a fantastic, inexpensive roasting joint that cuts into delightfully uniform slices. Now, we don’t agree with the term ‘poor man’s sirloin” in the slightest, as this cut has plenty of benefits that make it truly stand up for itself among various other cuts. However, it’s especially good roasted and thinly sliced, and any leftovers are great in sandwiches with horseradish mayonnaise or salads.

This steak cut comes from the inside of the hind leg, between the thick flank and the silverside, and is usually sliced from the entire topside. Tenderised topside steaks are perfect for schnitzels or steak sandwiches, and that’s because they are both lean and incredibly adaptable pieces.
